 Smoky Honey Spiced Almonds
 
 
1/2 cup    packed dark brown sugar  
1/2 cup    granulated sugar  
2 Tbs    kosher salt  
1/2 tsp    smoked paprika  
1/4 tsp    cayenne pepper  
2 cups    whole natural almonds  
1/2 cup    honey  
 
1 Preheat oven to 350 degrees.
2 Combine sugars, salt and spices in bowl; mix well and set aside. Toast almonds in oven for 5 minutes.
3 In large sauté pan, bring honey to boil; add warm almonds and stir to coat completely. Remove pan from heat.
4 Using slotted spoon, transfer honeyed almonds to bowl of spice mix. Toss almonds until thoroughly coated. Lift almonds from spice mixture, letting excess shake off, and spread on baking sheet to dry for about 1 hour. Store in airtight container.
